Raspberry Breakfast Muffins

I don't do grains very often but when I do, you better believe it's oatmeal! The reason I love oats so much is the fibre content, and the satiety that comes with that. These are perfect for after a workout especially since the raspberries curb any sweet cravings!

What you'll need :

1 Cup Fresh Raspberries

1 1/2 Cup Unsweetened Vanilla Almond milk

1 Large Egg

2 1/2 Cups Rolled Oats

1/2 Cup Pure Maple Syrup

1 Tsp Baking powder

1 Tsp Ceylon Cinnamon

1/4 Tsp Himalayan Salt

1 Tsp Pure Vanilla Extract

2 Tbsp Coconut oil


How to make:

Combine oats and almond milk together and let soak while you prep your other ingredients. Heat oven at 375º . Spray your muffin pan with coconut oil or use silicone liners (I like them best for easy clean up). Mix in all of your ingredients in the same bowl, saving the raspberries for last. Fill your muffin tin all the way and pop in for 20 minutes! I usually top with some nut butter for an extra healthy fat! Enjoy!
