Keto Bread

Everyone loves bread and with so many options to choose from, it's hard to decide which one to pick! Especially being gluten free, a lot of the store bought options are subpar and dry. They're also loaded with a million different ingredients..not much healthier than regular processed bread. I've made it a new goal of mine in 2021 to find healthy, unprocessed bread recipes that taste great and has variety! This is my first attempt and I loved the flavour of it! It was a bit sweeter and incredibly moist, which worked well for PB and J's! I also used it as an addition to soup, but didn't pass the toaster test!


A few simple ingredients:

1/2 Cup Pure Maple Syrup

1 Cup canned Pumpkin Puree

1/2 Cup Coconut Oil

1 Tsp Vanilla Extract

6 Eggs

1/2 Cup Coconut Flour

1 Tsp Baking Powder

1 Tbsp Ground Ceylon Cinnamon

3/4 Tsp Himalayan Salt


  1. Pre heat oven to 350°. Line a 9x5 loaf pan with parchment paper.

  2. Whisk together maple syrup, pumpkin, coconut oil, vanilla extract and eggs until smooth.

  3. In a separate bowl, mix coconut flour, baking powder, cinnamon and salt.

  4. Sift the dry ingredients into wet mixture. Once combined, pour the batter into the pan.

  5. Bake for 50 to 60 minutes or until toothpick comes out clean. Cool completely, remove from pan and slice!
